Junk Food (Where's the Science Here) ReviewI ordered this book from the local library, not sure what to expect. What I found is a great little gem that exceeded all expectations. The title may be Junk Food but the emphasis is on science. Cobb presents six "junk foods" (popcorn, corn chips, chocolate, candy, potato chips, soda) to the reader with background, description, and a little science. For example, the reader learns how and when potato chips were created and how they are made and packaged today. He/she also learns that the gas inside the bag to preserve freshness and integrity is nitrogen. An experiment in which a bag is punctured and the gas used to extinguish a match demonstrates this. Ms. Cobb emphasizes that an adult should light the match.
In addition to the lively, informative text, the book also is graced with tremendous photographs that explose with color and clarity. The time lapse sequence of popping corn is phenomenal.
Junk Food's last chapter is about nutrition, diet, and food labels.
